Soup Is a “Toxic” Comfort: Drink Less and Choose Water

Chinese food culture treats soup with something close to reverence.

When someone feels weak, they are told to drink soup. When someone is ill or hospitalized, soup appears again. After exhaustion or a late night, the answer is often another pot of slow-cooked broth. Many people believe that the longer ingredients simmer, the more concentrated the nutrition becomes—and that the “essence” of meat eventually moves into the liquid.

The reality is nearly the opposite.

Calling soup “toxic” here does not mean that one mouthful causes poisoning. It means that many rich soups have low nutrient density while carrying easily overlooked amounts of purines, fat, and salt. Drink them heavily and repeatedly, and the nutritional return may remain small while the metabolic burden keeps growing.

The “essence” in soup is far smaller than people imagine

When meat is simmered, most of its protein, iron, zinc, calcium, and vitamins do not migrate into the broth. They remain in the meat and other solid ingredients.

Consider clay-pot chicken. Per 100 grams, the chicken contains about 20.9 grams of protein, while the broth contains only about 1.3 grams. Most of the protein does not become “essence” simply because the pot has simmered for hours. Nutritional data published by the Hubei Provincial Health Commission also show much lower amounts of calcium, iron, and zinc in the broth than in the chicken.

So drinking the broth and discarding the meat is not extracting the best part. It is throwing the most nutritious part away.

The nutrition stays behind, while purines, fat, and salt enter the liquid

Why does soup taste so rich?

During prolonged cooking, some flavor compounds, fat, salt, and purines dissolve or disperse into the water. In other words, the substances that become concentrated in broth are not necessarily the nutrients the body needs most. They may instead be substances that many modern diets already provide in excess.

This is particularly relevant to concentrated meat broth, bone broth, seafood soup, and hot-pot broth:

  • purines from meat and seafood can move into the cooking liquid;
  • milky-white broth often reflects emulsified fat, not unusually high calcium or protein;
  • cooks commonly add substantial salt, flavor enhancers, and other seasonings to intensify the taste;
  • drinking bowl after bowl can add fat and sodium without creating strong satiety.

The Chongqing Municipal Health Commission therefore advises people with gout or high uric acid not to drink meat broth and warns people with high blood lipids to avoid fatty soups.

“The whiter the broth, the more nourishing” is a classic mistake

When fish soup or bone broth turns milky white, many people assume that protein and calcium have been boiled out of the ingredients.

In reality, the pale color mainly comes from tiny fat droplets dispersed through the water by boiling and agitation. A whiter, thicker, more aromatic broth often means that fat has been emulsified more thoroughly. It does not mean that the soup has become more nutritious.

Bone broth is not an ideal calcium source either. Large amounts of calcium from bone do not readily dissolve into ordinary cooking water. For dependable calcium, milk, yogurt, and many soy foods are generally more useful than a large pot of bone broth.

If the goal is hydration, plain water wins

Plain water contains no purines, fat, added salt, or unnecessary calories. It directly performs the most important job of a drink: replacing water.

Soup is different. It often makes people feel that they are “nourishing the body,” even when what they are mainly consuming is water, salt, fat, and a small amount of flavor compounds.

If you are thirsty, the best choice is plain water. If you need nutrition, eat meat, eggs, dairy, soy foods, vegetables, and staple foods. Trying to use soup as both hydration and nourishment often does neither job particularly well.

Taste soup if you enjoy it, but do not treat it as a tonic

This does not mean that every soup must be banned. A healthy person who occasionally drinks a small serving of light, low-salt, low-fat soup generally has no reason to panic. The habit worth changing is treating rich soup as a health product and drinking large amounts every day.

A better approach is simple:

  • drink plain water when you are thirsty;
  • keep soup to a small bowl instead of using it as drinking water;
  • limit concentrated meat broth, bone broth, seafood soup, and hot-pot broth;
  • skim visible fat and use less salt and seasoning;
  • eat the meat and vegetables instead of consuming only the liquid;
  • be especially cautious with rich broth if you have high uric acid, gout, high blood lipids, or high blood pressure.

Soup is not a concentrated extract of everything valuable in the ingredients. It is closer to seasoned water.

Most of the real nutrition remains in the meat and vegetables. Soup can be enjoyed in small amounts for flavor, but it should not carry the burden of “nourishing” the body. Instead of comforting yourself with a large bowl of rich broth, eat a proper meal and eat the solid ingredients. If all you need is hydration, drink a clean glass of plain water.
